Blonde / Golden Ale - Other
ruby red saison hybrid after re-fermenting on second use Marquette grapes. Initial aromas and flavours open with blackberry and floral red wine leading to light stone fruit saison notes. Bottle and keg conditioning gives this grape ale a light sparkle that helps bring out all the lovely features. Our grape ales are a full circle project that combines our love of wine and beer. We gently press the Marquette grapes for our wines than are able to re-use the grapes in this harmonious beverage.
Brett Beer
Brett + Piquette. Our first release of our Piquette based beverages. In this version we rehydrated our skins with a Brett forward table beer and soaked the skins for 21 days (Acadia Blanc grapes). Hopped the Acadia Blanc with Strata and Sabro.
Stout - American
Aged in foeder. Brown sugar, dried fruit & chocolate. Dry with hints of vanilla & coconut.
Brett Beer
Lightly tart saison fermented in oak foeders with brettanomyces. Flavour and aromas of fresh apricots and subtle brett funk.
Brett Beer
We experimented by oxidizing some organic white wine last fall, blended it with different spices and aromatics to make a vermouth like beverage.
Next, 350 litres of "Vermouthish" was blended with a light brett forward barrel aged saison, aged for 8 months and is now in a can for your immediate enjoyment. This one has been changing a lot over the last little while so don’t be afraid to hold onto a couple and see how they transform.
